Those cool cats at out-of-print archive have filled my unlikely and very specific request for the UK magazine Nintendo Magazine System #6 (one of the few early ones I'm missing), and to my surprise and delight it is the 1993 Winter CES issue, full of previews and quite a few unreleased games. No new screenshots or anything, but lots of titles I'd never seen. I pulled out the eleven pages that either mention an unreleased game (or rumored game, as the case often is) or is very specifically covering CES, since I've been collecting CES coverage for a side project. Anyway, the set is here:

A lot of this is of the extreme rumor variety, but I tried to be all-inclusive. I seriously doubt Joe & Mac 2, Itchy & Scratchy, Mortal Kombat, Team Yankee or Bebe's Kids were ever considered for the NES, but I think they should now be considered in any kind of rumor list.
I haven't gone through the huge list of CES 93 games on the last couple pages, maybe you guys want to collectively take a stab at them? I would imagine there must be some Game Boy and/or SNES titles we've never heard of. |

There were two Hokuto no Ken games for the Super Famicom.
Full Metal Planet was a computer strategy game. Don't know if it's the same as Super Full Metal, which there's a beta of.
There were two Makeruna! Makendou games, the first of which was released in the US as Kendo Rage.
There were three Super Black Bass games but no Blue Marlin.
As for Skull Keep, that's probably Dungeon Master II: Skullkeep, which came out for the Sega CD. Original Dungeon Master was released for the Super NES.

Actually, there were 3.
#5 was an RPG, while 6 and 7 were fighters.
Bionic Volleyball could've become Hyper V-Ball, the only game McO'River published besides Aero Fighters (which might explain why it's rare and semi-valuable) :D
F1 Grand Prix - McO'River
Lost Mission (Odysselya)
Makendo could've become Kendo Rage
Power League Baseball probably became Sporting News Baseball.
Power League Volleyball (actually, I guess it was Dig & Spike Volleyball. I mixed the title with Super Spike V'Ball for NES.)
Power Spikes - another McO'River title
I suppose you know Syvalion was only unreleased in US.
They list Tom & Jarry, and Tom & Jerry the Movie, but I think they are one and the same (as I believe T&J was released about the same time as the movie, and the first level took place in a theatre).
Jennifer Capriati was released on Genesis, I think.
Now for GameBoy:
Crash 'n the Boys - Street Challenge
Hammerin' Harry (GameFAQs says it was released in the US, but I have never seen or heard of it until now)
Omar Sharif On Bridge
NES:
Never heard of Bebe's Kids for NES. I know the SNES game is a collectible because it's so crappy.
